When I started my series, Crime Always Pays at the Daily Cuppa, I also thought it would be a short story that turned into 20,000 words. You can do it. It's very satisfying to accomplish it. Only a couple more weeks until all chapters are published. I got to a certain point of writing it as I published and then started writing ahead.
